Meal Time

I shared this one before, but with the East sitting in the middle of a cold snap this week, I found myself revisiting it again. When the temperatures drop and the air feels sharp, there are certain meals that just make sense. This is one of them.
It is hearty, warm, and deeply satisfying. The sausage brings richness, the beans add substance, and the broth ties it all together in a way that feels comforting without being heavy. Pair it with a good, crusty loaf of bread and you have the kind of dinner that is best enjoyed slowly, sitting alongside the fireplace with the Winter Olympics playing in the background.

Pasta Fagioli
A hearty Italian classic made with sausage, beans, vegetables, and pasta served separately to keep the broth rich and balanced.
Yield: Serves 6 to 8
Prep Time: 20 minutes
Cook Time: 30 minutes
Ingredients
3 tablespoons extra virgin olive oil
1/4 teaspoon red pepper flakes
4 garlic cloves, thickly sliced
1/4 cup chopped carrots
1/4 cup chopped celery
1/4 cup chopped onion
1/2 tablespoon chopped fresh thyme
1/2 tablespoon chopped fresh rosemary
1 cup chopped yellow bell pepper
1 cup chopped green bell pepper
1 pound Italian sweet or spicy sausage, casings removed
1/2 cup white wine
1 cup tomato sauce
1 1/2 cups chicken or beef stock
1 pound canned cannellini or Great Northern beans, drained
1 cup ditalini, elbow pasta, or spaghetti broken into 1 inch pieces
For Serving
2 tablespoons chopped fresh parsley or chives
Extra virgin olive oil, optional
Instructions

Heat olive oil and red pepper flakes in a large saucepan over medium heat for 1 minute.

Add garlic and cook, stirring, for 2 minutes.

Stir in carrots, celery, and onion and cook for 2 minutes.

Add thyme and rosemary. Stir and cook for 2 minutes.

Add yellow and green peppers and cook for 2 more minutes.

Add sausage and cook, breaking into small pieces, for about 3 minutes.

Stir in white wine and cook for 2 minutes.

Add tomato sauce and stock, increase heat, and bring to a boil.

Reduce heat to medium high, add beans, and cook for 2 minutes.

Cook pasta separately according to package directions.

To serve, place about 1 cup cooked pasta in a bowl and ladle soup over the top.

Garnish with parsley or chives and drizzle with olive oil if desired.
Note: Keeping the pasta separate prevents it from absorbing too much broth and allows leftovers to maintain their texture.
